Way off the beaten path of my typical blog but I thought I would share a good recipe for vegan burgers that I make for us. Just threw this together tonight it was too good to not pass along! And very simple too.
1 Cup cooked brown rice
1 Cup cooked drained corn
1 Cup raw diced mushrooms
1 large cooked sweet potato peeled and mashed
Finely diced onion, garlic, 1tsp Himalayan sea salt
Combine ingredients together and form into patties. Bake at 415 for 30 minutes flipping half way through. I put them on parchment paper so they don’t stick. We eat them on a gluten free bagel with ketchup.
* I have altered this a tiny bit as my daughter says they were too mushy in the middle. I have cooked them on parchment paper now at 425 for 20 minutes on each side so 40 min total
